Chicken Caldereta

Caldereta is a Filipino tomato-based stew, originally made of goat meat, served for fiesta, birthdays and other occasions.

This meal is perfect with rice.

Chicken Caldereta

Ingredients

  • 1 whole chicken 4-5 lbs. Cut into pieces.
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • salt/pepper
  • 2 potatoes quartered
  • 1 carrot diagonally cut, 1/2 inch thick
  • 1 green bell pepper cubed
  • 1 red bell pepper cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 3 chilis chopped
  • 2 cups tomato sauce
  • 1 1/2 cup water

Instructions

  • In a bowl, combine chicken, pineapple juice, soy sauce, salt and pepper. Marinate chicken for 30 minutes.
  • In a pan, heat oil in medium heat.
  • Cook potatoes until lightly brown. Remove from pan and drain on paper towel. Set aside.
  • In the same pan, cook carrots until lightly brown. Remove from pan and drain on paper towel. Set aside.
  • In the same pan, cook bell peppers until lightly brown. Remove from pan and drain on paper towel. Set aside.
  • In the same pan, cook chicken until lightly brown. Remove from pan and drain on paper towel.
  • In the same pan, saute onions and garlic. You might want to add oil.
  • Add tomato sauce, water and the rest of the chicken marinade. Bring to boil. Add chili peppers.
  • Add the chicken back to the pan. Lower heat and cover. Cook fro 15 to 20 minutes or until chicken is tender and cooked through.
  • Add the potatoes and carrots and cook until tender.
  • Add the bell peppers. Cook for 3-4 minutes or until sauce is thickened.
  • Serve.

Notes

You may add celery. Season with salt and pepper.
