Arroz Caldo
Filipino-style congee with chicken, ginger, hard-boiled egg is perfect for cold season.
Ingredients
- 1 whole chicken bite-sized
- 1 onion chopped
- 3 cloves garlic minced
- 1 ginger thinly slice
- 2 tbsp fish sauce
- 1 cup rice uncooked
- 6 cups water
- 2 chicken cubes
- salt/pepper
- 3 eggs hard-boiled
- 1/4 cup fried garlic
- 1/4 cup green onions chopped
- 1 calamansi
Instructions
- In a pot, saute onion, garlic and ginger. Cook until onion is softened.
- Add chicken, cook until light brown. Add fish sauce.
- Add rice, toasting them, until light brown.
- Add water. Stir. Let boil.
- Remove scum, if necessary.
- Add chicken cubes. Stir.
- Lower heat and simmer. Stir occasionally until rice is softened.
- Season with salt/pepper.
- Serve with hard boiled egg, fried garlic, green onion and a drizzle of calamansi.
